It helps with the freezing by keeping the ice crystals small (it has something to do with the fact that sugar is hydroscopic). Or add some sweetened condensed milk, because it is already emulsified. That is why they want so much cream versus milk in a no cook ice cream: emulsification.

I also love ban-anna ice cream so I look forward to your perfecting this recipe. Maybe a raspberry ribbon will lessen the sweetness and be super fruity yummy. Or a rum brown sugar ribbon to riff on bananas foster?
Fruit flavors are usually my fav, but I also love butterscotch, cheesecake and Carmel.
